James leads the bar at House Arundel with a simple idea: cocktails that change with the seasons, crafted with balance, precision, and a warm, unpretentious welcome. He honed his craft managing cocktail bars in New Zealand before moving into brand roles across Melbourne and London—experience that sharpened both his palate and his feel for what modern guests actually want to drink.
